Cassandra Cake Co’s Co-Owner Cassandra gives us the scoop on the bakery’s new store

The popular PoCo spot just opened a pop-up in Pitt Meadows

One of PoCo’s favourite spots now has a pop-up shop a little further east.

Cassandra Cake Co., a custom bakery best known for its scrumptious cakes, gorgeous desserts, and holiday high teas, recently announced the opening of a five-month pop-up location in Pitt Meadows, marking the first expansion for the bespoke bakery.

We sent a few questions over to co-owner Cassandra Curtis during the bakery’s soft opening last month to get an idea of what our readers can expect from the newest bakery on the block.

Congrats on the new location! How has business been? Where can people find the second location?

Business has been going great! Our second location is located in Osprey Village #101-10973 Barnston Rd., Pitt Meadows, and we are open Tuesday-Saturday from 9-3.

When and how did you start your business? What were your first instances of entrepreneurship?

I have made cakes on the side for friends and family for over 14 years now. I started as “Cassie cakes” but officially launched Cassandra Cake Co. in July of 2022. I have always been encouraged to pursue entrepreneurship—even at nine years old I was making balloon animals at the farmers market, face painting, and babysitting.

Is there anything exclusive that customers can only get at the new location? Any new items at both stores as a way of celebrating?

We will have our cupcake club flavours available at both locations! This is a super fun way for all of us to create something fun and new for our customers to try. We also offer bread at the second location, which isn’t something PoCo has! The Port Coquitlam location does offer high tea, which Osprey does not.

Cassandra Cake Co. has become quite the destination for some gorgeous tea times. Does the second store stick to a similar aesthetic as the first, or are there some key differences?

We did our best! The second store is a pop-up style for five months, in an ice cream shop that closes for the winter—so no crazy renovations, but we tried to keep things in touch with our brand.

Anything else you’d like to mention?

We love seeing all our community members in the bakery! We are stocking our retail shelves with local businesses and our own products and would love for you to come check them out.
